Conservation:
Once the extra virgin olive oil with spices and lemon has been processed it is stored, away from harmful light and air, in stainless steel tanks. Every now and then the oil is slowly stirred in order to obtain a perfect fusion of flavour.  

Bottling:
The extra virgin oil with spices and lemon is then stirred even more slowly for around two hours in order to obtain a homogeneous product; it is then poured through a cotton filter and bottled in special dark glass. The bottles are taken from their original wrappers only at the moment of filling, they are then blown with alimentary nitrogen, filled and capped. Even although the whole process is carried out on a home made basis, our company respects and applies every health and hygiene measure required for this activity.

Packaging:
Once filled and capped the bottles are labelled and packed manually.   

Conservation:
In order to maintain an optimal preservation, the product should be kept in a dry, cool place, away from the rays of the sun. Under these conditions the product will remain well preserved even after opening.

How to savour the flavour:
Thanks to its intense aroma of aromatic herbs which intensifies the flavour both of the meat and of the bitter sour taste of fresh cheese, it is wonderful as a condiment for carpaccio raw beef ham or for marinating fresh cheeses such as caprino goat’s cheese or robiola cream cheese. Perfect on boiled potatoes, preferably hot which allows its flavour to explode; decisive and intense. Recommended in particularly on antipasti di mare fish starters.
